Boricua Soul Chef and DPS Cafeteria Manager team up for latest Durham Bowls Creation
DURHAM - Durham Public Schools is proud to announce the third of six new recipes from Durham Bowls 2018: the Chicken & Cornbread Dumplings Bowl.
On Thursday, February 21st, the Chicken & Cornbread Dumplings Bowl will debut on school lunch lines across the district. The Chicken & Cornbread Dumplings Bowl is a creation of Chef Toriano Fredericks (Boricua Soul Food Truck owner) and Venice Prince (Food Service Manager at Lucas Middle School). This Southern-inspired dish combines chicken, veggies (carrots, celery & peas) and buttermilk (provided by Carolina Farmhouse Dairy) crème broth with scrumptious cornmeal and wheat flour dumplings.
Last month’s Cuban Pork & Rice Bowl was created by Chef Roberto Copa (Copa Restaurant owner) and Gwen Coley (Food Service Manager at George Watts Elementary School). The Cuban and Spanish-inspired bowl featured local pasture-raised pork (provided by Firsthand Foods), brown rice, veggies (carrots, spinach, tomatoes, sweet red & yellow peppers), dates, figs, and spices.
About the 2018 Durham Bowls Competition
On October 13th, 10 DPS Food Service Managers and 10 Durham Chefs produced mouth-watering samples of their recipe-in-a-bowl concepts designed earlier in the year to meet student tastes, school kitchen constraints, and all federal meal regulations. Over 400 students, families and community members turned out to eat great food, vote for their favorites, watch a documentary about Durham Bowls, face paint, dance, and more.
One parent who attended the event wrote, “My kids and I were blown away by the ingenuity, creativity and deliciousness displayed at this event. Durham Bowls made me so proud of DPS and of our community.”
All 10 recipes from Durham Bowls 2018 will appear on DPS menus in 2019 including the People's Choice Award-winning bowl created by Manager Keisha Jones (Eno Vally Elementary School) and Chef Stephanie Terry (Sweeties Southern and Vegan Catering).
