This is a recipe for crunchy caramel bites. They are so tasty and melt in your mouth. You should use this recipe because although it takes a while to make, the process is really enjoyable and useful. I found it especially fascinating to observe the different ingredients evaporate in the stove pot.
First step is to gather your ingredients. You will need: one to two sticks of butter, two cups of granulated sugar, one cup of light or dark corn syrup and 16 ounces evaporated milk.
Put your corn syrup and sugar in a bowl together. This step helps most with the mess of the process. I found it easier to dump the ingredients into the pot, rather than to make a mess of putting them in separately.
Combine all ingredients in the pot at medium temperature until it starts to boil. Make sure to be constantly stirring, with patience. This should take about 5 to 10 minutes.
Once the mixture has begun to boil, slowly add the evaporated milk into the boiling mixture, making sure to continuously stir. Be careful to not pour it in too quickly or else the milk could start to curdle. This is the longest part of the process and should take about 15 minutes.
Now place the finished caramels into the fridge too cool. Depending on who you are making these for and your preference, you can either leave the pan and take pieces of crumble off or you can cut them into bites. This is the perfect treat for families to enjoy together, or to serve to guests when entertaining.
