With all the chaos that is going on in the world right now, it is sometimes hard to remember the teenagers we were before the Coronavirus outbreak started. And what is more teenage-like then indulging in on a warm plate of fluffy pancakes? If you ever need something to do to relieve the stress these crazy times have caused, dive into this simple pancake recipe. I promise you, you won’t regret it!

Ingredients:

  • 1 cup of all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon of salt
  • 1 egg, beaten
  • 1 cup of milk
  • 2 tablespoons of vegetable oil
  • Chocolate chips, berries, syrup or whatever toppings you want

Step one: In a large bowl, mix flour, sugar, baking powder and salt. Make a hole in the center, and pour in milk, egg and oil. Mix until smooth.

I always mix the pancake batter with my green kitchen aid (left) until the batter resembles what is in the bowl (right)

Step two: Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup of batter for each pancake.

Step three: For the fun part, throw on any toppings that will satisfy your sweet tooth. Personally, chocolate chips and M&M’s are my favorite.

Step four: After about a minute, or whenever the bottom is a golden brown color, flip the pancake. Let it cook until both sides are even.
