Pasta salad serves as refreshing start to spring By: Mishael gill '23

One of my go-to spring recipes is pasta salad. It's a super easy meal that can be comfortably shared amongst friends and family. With just a few simple ingredients, pasta salad can serve as a side, appetizer or even main course, making it a highly flexible and tasty dish.

To make pasta salad, you'll need the following ingredients:

  • Pasta (spiral or bow-tie is preferable)
  • Grape tomatoes
  • Bell pepper of your choice
  • Cucumber
  • Mozzarella balls (feta is a good substitute too)
  • Greek or Kalamata olives
  • Pesto

Pour 6 to 8 cups of water in a large pot and bring to a boil.

Once the water is boiling, toss in a cup of pasta.

While the pasta boils, chop up your pepper, cucumber and a handful of grape tomatoes.
Next, finely slice your olives and dice the mozzarella.
Once the pasta is al dente, drain out the water and run the pasta under cold water to cool. Set aside to drain.

Time to combine: grab a large mixing bowl, a spatula, the pesto and the chopped ingredients.

Add 2.5 tablespoons of pesto and mix until well combined.
Next, add in the vegetables, olives and mozzarella and mix again.

There you have a super simple and refreshing salad perfect for warm weather. Definitely give this a try as a new meal to add to your repertoire.
