Matzo Ball Soup is an utmost comfort meal for Jewish people, especially now with the upcoming holidays. This hearty, comforting soup is a perfect option for an easy and snug meal. Extra toppings can be added such as chicken and green onions to add flavor. This recipe makes about five servings.
1. In a medium sized bowl add ¼ cup of oil and both of the eggs, use a whisk to combine well. Then add in ⅔ cup of matzo meal to the oil and egg mixture, and stir well.
2. Once the matzo meal is fully incorporated let it sit for 15 minutes. After the 15 minutes roll the matzo mixture into golf-sized balls.
3. In a large pot, add 4 cups of broth, 1 cup of water and chopped veggies. Turn on high heat and let boil. Immediately after boiling add matzo balls and let cook for 30 minutes. Serve and enjoy.
