Mango Spinach Summer Salad & Spicy Asian Tofu Burger With Citrus VINAIGRETTE

Summers are for Mango's

Salad Ingredients:

  • 1/2 bag of baby Spinach
  • 2 C of Mango chopped up into tiny pieces
  • 1 C of Cucumbers
  • 1/2 C of chopped red Onion
  • 1/4 C of chopped Walnuts
  • 10-12 almonds
  • 1/4 cup dried cranberries (optional)

Tofu Burger Ingredients:

  • 1 block of Extra firm tofu.
  • 1 cup of breadcrumbs
  • 2 tbsp of Nutritional yeast

Marinade:

  • 1 tbsp of peanut butter
  • 1 tbsp of honey
  • 2 tbsp of sriracha
  • 1/4 C of Tamari or Soy sauce
  • 2 tsp dry ginger powder

Dressing:

  • 1 lime
  • 2 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp of water
  • Mix everything in a bowl and set aside.

Directions:

Tofu Burgers - Method 1 (look for method 2 for an easier version):

  • Drain the water from tofu - Wrap the tofu in paper towel and place it in the microwave for 2 minutes.
  • Remove, let cool and squeeze the water and place a heavy object to drain the remaining water about 5 mins.
  • Gently squeeze to drain any excess water.
  • Take a large bowl and place the tofu and roughly mash/scramble with your hands.
  • Add the breadcrumbs, nutritional yeast and mix it.
  • Add all the marinade ingredients and mix until the marinade is integrated into the mixture.
  • The whole thing will feel a little mushy. Don't fret, just continue to mix.
  • Once you know everything is integrated well, make into patties and place on greased sheet pan.
  • Pre heat oven to 425 deg.
  • Place the tray in the oven and set it to cook for 40 mins.
  • At 20 minute mark, make sure to flip the patties and continue for another 20 mins.
  • Serve on a burger patty.
  • Make a dressing out of the marinade and dress up both sides of the burger bun.
  • Enjoy a scrumptious Spicy Asian Burger.

Method 2:

  • Drain the water from tofu - Wrap the tofu in paper towel and place it in the microwave for 2 minutes.
  • Remove, let cool and squeeze the water and place a heavy object to drain the remaining water about 5 mins.
  • Gently squeeze to drain any excess water
  • Slice the tofu as cubes or lengthwise.
  • Dip each into the marinade and let them coat on all sides.
  • Leave the Tofu in the Marinade bowl for 10-15 mins.
  • Pre heat the oven to 420 deg.
  • Spray a pan with cooking oil or lightly brush with oil.
  • Place the tofu pieces and pour any extra marinade over the tofu.
  • Place in the oven and let cook for 20 mins.
  • At 20 min mark - take the tofu out, flip and let them cook for another 20 mins.
  • Use the Tofu as part of salads, patties for burgers or snack on them by itself.

Salad:

  1. Take a deep bowl and place all the salad ingredients.
  2. Pour the dressing into the salad, mix and server with spicy Asian Tofu Burgers!
