Shortbread with strawberries recipe By Sophie kriz

Especially during quarantine and orders to stay home, the one thing everybody needs right now is comfort food to cheer them up. As an easy-to-bake option that takes just under half an hour and only requires some basic staple ingredients, these shortcakes are the perfect desserts to do just that.

First, one only needs a few ingredients for this recipe:

  • 3 tablespoons of butter
  • 1 cup of freshly sliced strawberries
  • 1 large egg yolk
  • 1/3 cup of milk
  • 5+1/3 tablespoons of sugar
  • 1 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/8 of a teaspoon of salt

First, mix together the flour, baking powder, butter, and three tablespoons of sugar, until the mixture resembles coarse crumbs. It is best to use a pastry cutter for this, if you have one). Next, in a separate bowl, whisk together the milk and egg yolk.

Next whisk together the flour, remaining sugar, baking powder, and salt. Cube the remaining butter cold and whisk it int until the mixture resembles coarse crumbs.

Knead the dough four to five times. Then separate it into four portions. To shape them, first roll them in your hands to create a ball and then flatten them into 3/4 inch discs with the base of your hand.

After shaping them, prepare a baking sheet covered in parchment and place the discs at least two inches apart. Bake at 450 degrees for eight to 12 minutes, or until slightly browned.

Dust the strawberries in the remaining sugar, and serve. Enjoy!
