Easy banana pudding recipe guarantees to wow guests Chelsea Strober '21

As year 2020 is coming closer to an end, reflecting on what this COVID-crazy year could have been is almost inevitable. For me, one thing I wish I could have done is go to New York City and grab my favorite dessert at Magnolia Bakery: Banana Pudding. Things as simple as this dessert are those that I have taken for granted in the past, and now that I cannot have it, it's all that I have been able to think about. So, I decided to try and find the best recipe to match Magnolia's, and I was definitely successful. Below I have provided this recipe that is sure to wow your friends and family (from a distance, of course).

For this recipe you will need:

  • One (14-ounce) can sweetened condensed milk
  • One (3.4-ounce) package instant vanilla pudding mix (preferably Jell-O brand)
  • Three cups heavy cream
  • One (12-ounce) box Nabisco Nilla Wafers (no substitutions!)
  • Four cups sliced ripe bananas
First, in a small bowl, on the medium speed of an electric mixer, beat together the sweetened condensed milk and water until well combined, about one minute.
Then, add the pudding mix and beat well, about two minutes more.
Cover and refrigerate for three to four hours or overnight before continuing. It is important to allow the proper amount of time for the pudding mixture to set.
Once you have allowed the pudding mixture to set (I waited overnight), whip the heavy cream until stiff peaks form. Do this in a large bowl on the medium speed of an electric mixer.
Then, gently fold the pudding mixture into the whipped cream until they are well blended and there are no streaks of pudding.
To assemble the dessert, select a large, wide bowl (preferably glass) with a four to five-quart capacity. Arrange one-third of the wafers to cover the bottom of the bowl, overlapping if necessary, then one-third of the bananas and one-third of the pudding. Repeat the layering until there is no pudding left and garnish the top with wafer crumbs.

When finished assembling, cover the dessert tightly with plastic wrap and allow it to chill in the refrigerator for four to eight hours before serving. Enjoy!
