Laiba’s Brownie Recipe Recipe by Laiba of Sweet Tooth Charity

To me, the best brownies are always those with the gorgeous, thin cracks on top, the fudgy, dense, centers, and the melted chocolate all in one bite-sized beauty. The texture of these brownies will fulfill every craving of brownies you’ve ever had. The espresso powder creates a sort of contrast that always occurs between coffee and chocolate. It’s got those melty pools of chocolate that just complement the fudginess of the brownie so harmoniously. Scroll to the end for a bonus recipe!

And the best part is: They only require one bowl, which means less mess! (Moms around the world-“Yesss!”)

The Base Components

Chocolate

You can use chocolate chunks or chocolate chips.

My brownies use real chocolate and cocoa powder. For this recipe you want to use unsweetened cocoa powder, we use this one.

As always, you’ll want to use real, good quality chocolate chips for this recipe. You can use milk chocolate chips, or semi-sweet chocolate chips.

Butter

Let’s talk butter. For this recipe, you want to use unsalted butter, because salted butter will change the taste and be very overpowering. In this recipe, you want to have butter that’s not melted, because you will microwave it with the chocolate.

Sugar

This recipe uses two kinds of sugar, white sugar, and brown sugar. You can use light brown sugar or dark brown sugar. The brown sugar is there to help intensify the sweetness, and add to the density, which will eventually contribute to the fudginess.

Flour

In this recipe, we use All Purpose Flour. The flour will help the brownies rise and will be its structure.

Eggs

You will need three eggs for this recipe. These will be added in right before the flour and cocoa powder.

Salt

Salt will help add to the flavor of these brownies. You will only need a pinch for this recipe.

Vanilla

Even though these are chocolate brownies, vanilla extract will add to the contrast of this dessert.

Espresso Powder

This ingredient is added to enhance to chocolate flavor, as coffee always does. You need to add it to something warm to dissolve it, so we add it right after the butter and chocolate comes out of the microwave. You can make your own using this recipe.

Extra Chocolate Chips

The extra chocolate chips are added at the end right before you add the batter to the pan, so that when you bite into the brownie, there will be melty pools of chocolate.

Equipment needed

Large Heat-Proof Bowl

Medium Sieve

Medium Wire Whisk

Silicone/Rubber Spatula

Microwave

Measuring cups - 1/4 cup, 1 cup, 1/3 cup

Brownie Pan

Parchment Paper - if your brownie pan is silicone material, you don’t need to use parchment paper, you just need to grease it with olive oil spray and pour the batter into the pan.

The Recipe

Ingredients

1 cup (2 sticks) Unsalted Butter

1 cup Milk/Semi-Sweet Chocolate Chips

1 1/2 cups White Sugar

3/4 cup Brown Sugar

3 Eggs

a pinch of Salt

1/2 teaspoon of Vanilla Extract

2 cups All Purpose Flour

1/4 cup Unsweetened Cocoa Powder

1/2 cup Milk Chocolate Chips

Instructions

Preheat the oven to 350 degrees Fahrenheit. Prepare a brownie pan with parchment paper.

Place the butter and 1 cup of chocolate in the microwave uncovered for 1 minute and 30 seconds. Take it out of the microwave and let it sit for 3 minutes. Whisk until combined.

Add in white sugar, brown sugar, vanilla extract, and salt. Combine and add in eggs and mix again until completely combined, sift in flour and cocoa powder and fold with a spatula until combined.

Fold in milk chocolate chips until evenly distributed throughout the batter. Put batter into prepared pan and spread evenly. Bake for 35-40 minutes, when a toothpick is put in, it should come out with some moist crumbs and fudginess.

Cool, cut and serve. Enjoy!

*Bonus Recipe*

My bonus recipe is Chocolate Espresso Icing that can go perfectly on top of these brownies.

If you want a caffeine free version, you can always leave out the espresso powder in both the brownies and the icing.

Ingredients

3 tablespoons Unsalted Butter

3 tablespoons Unsweetened Cocoa Powder

1/2 teaspoon Espresso Powder

1/2 teaspoon Vanilla Extract

3 tablespoons milk

4 tablespoons powdered sugar

Instructions

Put butter and cocoa powder in microwave for 30 seconds then take out, cool and add vanilla extract and milk.

Sift in powdered sugar and spread over brownies and serve.
