Stuffed mushroom caps are a classic. The Sterno Culinary Team developed this version a few years ago. Feel free to play around with the ingredients. Prefer diced ham to bacon? Go ahead and substitute. Like more garlic? Add a couple of more cloves. We'll also be walking you through the best way to serve your 'shrooms once they come out of the oven. We're roasting them directly in the food pan that's included in the Sterno Buffet Kit we'll be chatting about in just a bit.

Prep Time: 30 Minutes/Cook Time: 20 minutes

ingredients & procedure

  • Preheat oven to 350F
  • 24 large white button mushroom caps
  • 4 oz. cream cheese (softened)
  • 1 clove garlic mashed/minced
  • 5 sliced cooked and chopped hickory smoked bacon
  • 4 oz. (about 1 cup) grated Gruyere cheese
  • 3 tablespoon fresh chopped herbs (we like 2 tablespoons parsley, 2 teaspoons thyme, 1 teaspoon marjoram)
  • 24 interesting short skewers
In a bowl, mix together the cream cheese, garlic, bacon, gruyere cheese, and Herbs.
Spoon a rounded teaspoon of the cream cheese mixture into each mushroom cap.
Place the stuffed mushroom caps (stuffing up) into a half size, aluminum food pan and place in oven for about 20 minutes.

BEFORE YOUR GUESTS ARRIVE, PLACE THE WIRE RACK IN THE SPOT WHERE IT WILL BE WHEN THE PARTY STARTS.
CAREFULLY OPEN THE CHAFING FUEL CAN AND PLACE IN THE FUEL HOLDER.
PLACE WATER PAN (this is the deeper of the two pans included with the buffet kit) IN WIRE RACK. FILL A PITCHER WITH 16 OZ. (2 CUPS) VERY HOT TAP WATER AND POUR INTO WATER PAN.
USING A LONG-REACH STICK LIGHTER, LIGHT THE FUEL.
IF YOUR CHAFING DISH WILL BE OUT OF SIGHT WHILE YOU CONTINUE PREPARING, MAKE SURE THERE IS AN ADULT IN THE ROOM TO PREVENT AN ACCIDENTAL FIRE.
We roasted the stuffed mushrooms in the food pan (the shallower of the two pans) that is included with the Buffet Kit.

Using oven mitts, remove the mushrooms from the oven.
Place directly in the the wire rack. By this time, the water in the water pan should be steaming.
Insert a skewer in in the center of each mushroom.
