There's something luxurious when your cheesecake is filled with mascarpone, and not just good ol' cream cheese. You get a silkier, softer roundness in the mouth, and we've added a touch of piquant too — a zing of orange and lemon.

Our cheesecake is baked, low and slow, in a bain marie, so our filling is smooth and tender, showcasing all the beauty of a well-crafted cheesecake interior

How sexy can a crust get? But we've worked in ground almonds into our cracker crumbs — crackers we hand-pound so we don't end up with pulverized sand, but sexy, textured bits.


Meet our dentelle decoration

Dentelle au chocolat | don-tel oh sho-koh-lah | — that's the rough-hewn disc of crisp standing tall at the top of the slice

Our dentelle recipe comes from Sebastien Rouxel of Bouchon Bakery. It's a lace of hand-chopped almonds, cacao nibs, golden syrup, milk, butter, cocoa — that’s what dentelle means: “lace” in French.

Meet our chocolate calligraphy disc

We made this cake for Lucas to celebrate his birthday. Instead of the traditional "Happy Birthday" calligraphy, we fashioned chocolate discs and piped his initial instead. Our chocolate rounds are made from 55% dark chocolate, and our calligraphy piping is three parts white chocolate and one part medium-dark chocolate.
