Water Soluble Vitamins

These vitamins dissolve in and are carried by water

Vitamin B (Folic Acid)

Helps the body to make new cells. It comes from dark green leafy vegetables. A deficiency of this can cause Spina Bifida, a neural tube defect that effects the spinal cord during fetal developments.

Vitamin C

The function of this vitamin is to protect the body against infection. You can get vitamin C from citrus fruits and tomatoes. A deficiency of vitamin C can cause scurvy which causes a breakdown of collagen, bleeding gums, and skin hemorrhages.

Fat Soluble Vitamins

These vitamins dissolve in and are carried by fat.

Vitamin K

Helps blood clot normally. You can get this from dark green leafy vegetables such as spinach, kale, and parsley. Not having enough of this can cause bleeding and bruising.

Vitamin A

Vitamin A promotes good vision, hair and skin. It comes from red, orange and dark green vegetables. A deficiency of this can cause night blindness.

Vitamin D

Builds and maintains bones and teeth. Comes from milk and dairy products and sunlight. A deficiency cause case rickets which are bowed legs.

Vitamin E

Vitamin E protects the membranes of white and red blood cells. You can get it from vegetable oils, fruits, and vegetables. Not having enough of Vitamin E can cause poor nerve connection and neurological problems.

Minerals

Calcium

Strengthens bones and teeth. Comes from milk and dairy products, whole grains, and dark green leafy vegetables. A deficiency cause cause osteoporosis which is when bones become weak and brittle due to mineral loss.

Iron

Helps make red blood cells and helps our muscles store and use oxygen. Comes from animal products, meat, and dark green leafy vegetables. Not enough of this can cause anemia, a low red blood cell formation

Sodium and Potassium

Maintains fluid balance in the body. You can get it from salt, fruits, and vegetables. A deficiency can cause muscle cramps, irregular hear beats, and seizures.
