Recipe 1:

Tortellini Primavera

Tortellini Primavera


  • 1 14-ounce can vegetable broth or reduced-sodium chicken broth.
  • 2 tablespoons all-purpose flour.
  • 1 tablespoon extra-virgin olive oil.
  • "3 cloves garlic, sliced."
  • ¾ cup shredded Parmesan cheese.
  • 1 tablespoon chopped fresh tarragon, dill or chives or 1 teaspoon dried tarragon.
  • ⅛ teaspoon salt.
  • 4 cups chopped vegetables, such as broccoli, carrots and snap peas, or 16-ounce bag frozen mixed vegetables.


  1. "Put a large pot of water on to boil."
  2. "Meanwhile, whisk broth and flour in a small bowl. Heat oil in a large skillet over medium heat. Add garlic and cook, stirring, until just beginning to brown, 1 to 2 minutes. Add the broth mixture to the pan, bring to a boil and cook, stirring occasionally, until the sauce is thick enough to coat the back of a spoon, about 3 minutes. Remove from the heat and stir in cheese, tarragon (or dill or chives) and salt."
  3. "Add vegetables and tortellini to the boiling water; return the water to a simmer and cook until the vegetables and tortellini are tender, 3 to 5 minutes. Drain; add to the pan with the sauce and stir to coat."

Fruit & Veggie Sheet Pan Pancakes


  • 1/4 cup butter.
  • 1/2 cup zucchini, grated.
  • 1/2 cup carrot, grated.
  • 2/3 cup milk.
  • 1/2 cup applesauce.
  • 2 eggs.
  • 1 teaspoon vanilla.
  • 1 1/2 cups whole wheat flour.
  • 1 teaspoon baking powder.
  • 1/2 teaspoon baking soda.
  • 1/2 teaspoon cinnamon.
  • 1/4 teaspoon salt.
  • 1/2 banana.
  • 1/2 cup strawberries.
  • 1/2 cup blueberries.


  1. "Preheat oven to 425* F. Cover a 10 x 15 inch sheet pan in foil. Melt 1/4 cup butter in a microwave safe dish and brush half of it over the foil, coating evenly."
  2. "In a medium bowl, pour the remaining half of the melted butter (2 tablespoons). Grate half a cup each of zucchini and carrot and add to the butter. Also add milk, applesauce, eggs, and vanilla. Whisk until combined."
  3. "In a separate bowl, whisk together whole wheat flour, baking powder, baking soda, cinnamon, and salt. Add this mixture to the wet mixture and mix until combined."
  4. "Pour the pancake batter into the prepared sheet pan and even the batter out. Top with half a banana, cut into thin slices, as well as 1 cup worth of berries (we used half strawberry, cut into slices, and half blueberry)."
  5. "Bake for 13-14 minutes in the preheated oven, until slightly risen and cooked through."

Enchilada-STuffed Zucchini Boats

Enchilada-Stuffed Zucchini Boats


  • 1 tablespoon - butter.
  • 1 - red onion.
  • 1 - red bell pepper.
  • 1 - jalapeno chili.
  • 2 - cloves garlic.
  • 1 pound - tomatoes.
  • 1/2 teaspoon - salt.
  • 1 teaspoon - cumin.
  • 1 teaspoon - chili powder.
  • 4 large - zucchini.
  • 3 ounces - goat cheddar.


  1. "Dice onion, chop bell pepper and tomatoes into small pieces, and mince garlic. Remove seeds and chop jalapeno into small pieces. Shred cheese."
  2. "Preheat oven to 400* F. Line a large baking sheet with parchment paper."
  3. "Heat a large skillet over medium high heat and melt butter (or coconut oil). Saute onion, bell pepper, and chili for 10 minutes. Add tomatoes, garlic, cumin, chili powder, and salt. Saute for another 8-10 minutes."
  4. "Meanwhile, cut zucchini in half lengthwise and remove the hard stem at the top. Use a small spoon to scoop out the center, being careful to leave enough flesh that the zucchini stay stable."
  5. "Place hollowed zucchini on the prepared baking sheet and fill with tomato mixture. Top with grated cheese. Bake for 20 minutes, until zucchini is tender."

For example, after the preschoolers will make zucchini boats and start to be creative while they try to understand how to make it look and taste better. As shown in the picture, a flag was put in but they could put anything in showing that this recipe would perfect for a child because they would have fun.

Grilled Cheese Cauliflower Crust


  • 1 head large (6-7" dia.) – cauliflower.
  • 2 large – egg.
  • 1/4 cup – Parmesan cheese.
  • 1 teaspoon – basil, dried.
  • 1/4 teaspoon – salt.
  • 1/4 teaspoon – black pepper, ground.
  • 2 slice – cheddar cheese.


  1. Chop cauliflower. Using a food processor, pulse in batches until well blended.
  2. Scoop into a microwave safe bowl and loosely cover. Microwave for 4 minutes, then stir. Return to the microwave for 3 minutes. Allow to cool for a few minutes.
  3. "Meanwhile, preheat oven to 450* F and line a baking sheet with parchment paper. Lightly spray with cooking oil."
  4. "Place a cheesecloth or clean towel over a large colander. Pour Cooked cauliflower into cloth that covers colander. Be careful because the cauliflower steam and water will be hot. Push as much water out of the cauliflower as possible using the flat side of a spoon and twisting the cheese cloth. You'll need the cauliflower as dry as possible."
  5. "Once mostly dried of excess water, put the semi-dry cauliflower into a large bowl. Add eggs, Parmesan, basil, salt, and pepper. Mix well."
  6. "Scoop onto baking sheet in four separate and equal portions. Spread each into a 1/2 inch thick square piece of 'bread.'"
  7. "Bake for 15-20 minutes, until tops are golden brown. Remove from the oven and make two sandwiches with a slice of cheese in each (thick sliced!)."
  8. "Place back in the oven for one minute, until cheese has melted. Serve warm."

  • 3 tablespoon – flax seed, ground.
  • 1/2 cup – water.
  • 3 medium – banana.
  • 1/4 cup – applesauce, unsweetened.
  • 2 tablespoon – coconut sugar.
  • 1/2 cup – brown rice syrup.
  • 1 teaspoon – vanilla extract.
  • 1 teaspoon – cinnamon.
  • 1 teaspoon – baking soda.
  • 2 cup – pastry flour, whole wheat.
  • 1/2 cup – chocolate chips, dark.


  1. "Preheat oven to 350 degrees F. Line muffin tins with paper liners."
  2. "Combine ground flax and water in a small bowl, mixing completely. Set aside."
  3. "In a large bowl, peel and mash the bananas until some course chunks remain. Add the applesauce and flax mixture, mixing until well combined. Mix in the sugar, brown rice syrup, vanilla, and cinnamon."
  4. "Stir in the flour, baking soda, and chocolate chips, just until combined."
  5. "Spoon batter into muffin tins, filling about 1/2-2/3 way full. Bake for 20-25 minutes, or until toothpick inserted comes out clean."

These very delicious cupcakes are a very healthy dessert because these specific cupcakes have may healthy ingredients which include, bananas, applesauce, and whole wheat pastry flour. All of these ingredients and more will make very unhealthy normal cupcakes a very healthy choice.

This sweet treat is great for preschoolers to make because they will easily follow the instructions that the recipe needs. Not only will they easily follow the instructions but they will have fin making it with there family while they could think of different things to make as a topic.


It is important for preschoolers to learn how to cook because they learn how to problem solve and use information properly. Later in life they will need to use these skills to do something correctly in jobs. In addition, they will once leave there parents and need to learn how to cook themselves. Children can learn many skills when cooking. This includes, learning how to measure ingredients, learn to read the recipe and directions, and rule following. Cooking enhances a child's physical skill because they pour ingredients and mix. It enhances their intellectual growth because they learn how to work and problem solve when facing a complication in cooking.
