She is reminding us yet again of her awful betrayal story that has ruined her life and she seems like she is hinting to pip without him noticing that that's how she raised Estella to be.

Kinda bringing up that fact that Estella could be one of the "Great Expectations" and that she is cold, bitter, and harsh and that's how she has always been and how she is always gonna be. She seems to just not care enough to change even though she sees these flaws.

People in Pip's life are what they do. Their work is just what they are and this makes Pip want to be what he consideres a "gentleman" even more. He wants people to see him for what he is not what he does. But he still needs to still work on it and he can only dream now that one day he will reach that point in his life.
