Pina Colada Pie: I love a good creamy sweet pie and this pie was just that ;and the best part no baking !!!

Pina Colada Pie Ingredients:

For the crust : 1 1:2 cup of honey graham crackers , 1/4 cup of granulated sugar ,

8 Tbs of butter melted I added a little more about 9 Tbs of melted butter , I also added

1 Tbs of lime juice .

For the filling ; 1 cup of heavy whipping cream , 8 oz of cream cheese , 1/4 cup of granulated sugar ,1 tsp of rum extract ,

1/2 tsp of pure vanilla I used Mexican , half a can of 20 oz pineapple chunks , 1 1/2 cup of shredded sweeten coconut . 1 cup of crushed pecans (optional)

Supplies needed :

Pie dish 9.5 inch

Baking spray with butter in it ,


Chopper to crush graham crackers

Mixing bowl 3

Large spatula

Serving plates

Saran Wrap

Instructions : crush your graham crackers up real fine place in a mixing bowl add butter , sugar ,and lime juice 1tsp to mix . I also added a pinch of pure vanilla , mix good till all blended then press mixture into pie dish and up the sides of dish , place in the fridge to cool while preparing filling , next get a mixing bowl place your heavy cream in and beat till stiff peaks and is like shipping cream , take and place cream in the fridge , in another mixing bowl place cream cheese blend till creamy and smooth then add sugar , vanilla , rum extracts , mix , next add the cream from fridge fold into the mix ,add half can pineapple mix well till blended , the. last add the coconut blend well . I also added crushed pecans because my family likes that in this pie . Then I wrapped with Saran Wrap and placed in the fridge for 4 hours .
