The Pierre Hermé Lemon Cream

Unlike a lemon curd, Hermé's lemon cream has a richer, fuller mouthfeel. Instead of cooking the butter with the eggs, lemon juice, and sugar — the way a lemon curd would be made — the butter gets incorporated only after the custard has been cooked. We whip the butter in, emulsifying them bit by bit into a grand finale — an amazing tingling pucker of a cream!
