How to Use a Chemex Brewer How the f*@%k do I use this thing?!

If you could fuse a weird chemistry beaker with a wine decanter and sell it to a hipster, you would come up with a Chemex.

Sure I love a great cortado as much as the next guy, but there’s something magical about making perfect cup and enjoying it from the comfort of your own home.

Recently, I’ve been reading up on the hygge (or cozy) danish lifestyle and that’s essentially what this chemex does. It brews the perfect cup for those cozy mornings when all I want to do is read a book, listen to soft music, and relax.

So, why Chemex?

This glass brewer, was designed specifically to optimize the flavor profile of your coffee. If you’re a fan of bright, floral flavors from African beans like I am, this is the method you should be using.

Essentially, a chemex is like a wine decanter. It’s shape allows oxygen to flow into the brew while it’s being extracted and really help those flavor profiles come alive.

Gear:

  • chemex
  • Eco friendly, reusable cone filter
  • Tablespoon
  • Scale
  • Gooseneck kettle
  • Grinder
  • Water
  • Coffee beans

Process

  1. Boil water
  2. While the water is boiling weigh out and grind your beans as fine as kosher sea salt (medium fine). For this method, a 1:15 ratio is best. (1 gram of coffee, for every 15 grams of water; or 2 tbsp for every 6 fl oz of water)
  3. Once your water is done boiling, pour a bit of it into your empty chemex, making sure to wet the filter.
  4. Place your grinds into the filter, put the filter on your chemex and place it on the scale, tare the scale to 0.
  5. Wet the grinds, but don’t over saturate. They should be wet, but not swimming.
  6. Let this bloom for 45 seconds
  7. Break the crust by slowly pouring your water over the grinds in slow, concentric circles.
  8. If it fills up, let it drain a bit and pour again.
  9. Pour until you reach your proper water weight.
  10. Cool , swirl and enjoy.
LETTING YOUR COFFEE BLOOM IS THE MOST IMPORTANT PART OF ANY METHOD, BUT ESPECIALLY SO WHEN YOU'RE USING A CHEMEX. LET YOUR GRIND MINGLE WITH THE WATER A BIT!
