Test Scores do not define a Student

How does learning about all subjects in school relate to the SAT when it is only tested in three subjects?

There are many extracurricular activities schools have to offer which are shown on a college application
Why do colleges base their acceptances off of SAT scores?

A student should be looked at as a whole and not by a single score when getting accepted into college.
