Current Specialty Cheeses

Midnight Eclipse, Halo, Companion, and Lunetta

Midnight Eclipse

Midnight Eclipse is a delicate cow’s milk disc that is dusted with black vegetable ash before growing a wrinkly rind. It is creamy in texture, offering mild citrus flavors when young and a more robust earthiness as it ages.

It may look like a classic French goat cheese, but Halo is a beautiful, donut-shaped cow’s milk cheese with a wrinkly geotrichum rind. It is fudgy in texture and becomes softer and more spreadable as it ages. The flavors are mild and milky with a bit of a bite from the rind.

Companion is a cow's milk disc that is washed with brine as it ages. The rind becomes tackier as the cheese ripens, giving way to a soft paste that offers balanced flavors of beef broth, unsweetened chocolate and hay.

Lunetta is a natural-rinded cow's milk tomme with a firm texture that may sometimes develop crunchy tyrosine crystals. The cheese offers bright flavors of citrus and cultured butter with a savory, long finish.
