- Half onion
- Chipotle salsa
- Can of black beans
- Frozen corn
- Vegetable bouillon
Chop up the onion and pepper and put them in the crock pot.
Add about half of a jar of salsa.
Add vegetable bouillon. Note: we often have the cubes instead. In that case, put in two cubes.
Add 4 cups of water.
Add a big spoonful of cumin.
Add a can of black beans (don't drain 'em - put all the liquid in there).
Add 1 cup of frozen corn.
Press 4 button.
Set to low.
Set time to 8 hours.
Now you wait!
When it's done, blend a little with the immersion blender.
Put a spoonful of sour cream in bowl and stir. Top with tortilla chips/strips, shredded cheese, and diced avocado.
