MAPLE CAYENNE OVEN ROASTED CHICKEN WINGS

MAPLE CAYENNE OVEN ROASTED CHICKEN WINGS

makes 30 (unbelievably delicious) chicken wings

PREP TIME: 30 MINUTES/COOK TIME: 25 MINUTES

INGREDIENTS & PROCEDURE

ingredients

  • 30 chicken wing pieces
  • 1/3 cup maple syrup
  • 1 tablespoon cayenne pepper (or to taste)
  • 1teaspoon salt
  • 1 tablespoon olive oil

procedure

in small bowl, mix together the cayenne, maple syrup, salt, and olive oil.
place chicken wings in a sealable gallon plastc bag.
pour spice mixture over the bagged chicken.
seal bag and and give a couple of good shakes to evenly distribute the spice mixture. Place on fridge and let marinate for 20 minutes (you might want to flip the bag over halfway through to ensure all the wings are getting their equal share of spicy goodness).
while the wings marinate, line a full size sheet pan (cookie sheet) with foil. lightly coat the foil with non-stick cooking spray.
preheat oven to 400F

20 minutes later...the wings are ready to roast!

spread the wings (skin side down) evenly across the sheet pan.

place in oven and roast for 20 minutes. halfway through cooking time, Carefully remove from oven and flip wings over so that the skin side is facing up. Return to oven.

Place the wire rack where it will be used (away from flammable objects-napkins, drapes, centerpieces, etc.).

Carefully open the chafing fuel cans...
Use a spoon to open.
...and place in fuel holders. Place water pan in wire rack.
Fill a pitcher with 2 quarts of very hot (not boiling) water.
Pour water into water pan.
Light the fuel.
The fuel cans get very hot. Do not handle the cans or move the chafing dish once lit.

If your chafing dish will be out of eyesight while your in the kitchen, make sure an adult is in the room to prevent an accidental fire.

the oven timer just went off. pull your wings out and take a look.

they should look like this. If they don't, put them back in the oven for 5 more minutes. that slight charring you see is from the sugar in the maple syrup. This is a good sign. just the right amount will stay on the wings when you transfer them to the aluminum food pan (included with the Sterno party set).

your guests just texted. they're right around the corner. lets get these wings to the buffet table!

IT'S TIME...

using tongs, place the hot chicken wings INTO ONE OF THE ALUMINUM HALF-PANS. CAREFULLY PLACE IN THE CHAFING DISH. THE EDGES OF THE PAN MIGHT GET A LITTLE BENT WHILE YOU DO THIS. SIMPLY SMOOTH THEM WITH A TOWEL ONCE THE PAN IS IN PLACE.
