To keep the machine working properly, and the coffee tasting its best, it must be maintained well throughout your shift.
Immediately, after every shot pulled, flush the group head and knock puck from portafilter.
If not pulling consecutive shots, rinse portafilter and basket under hot water tap.
This will keep the machine's internal pipes, portafilter, and basket clean throughout your shift. This leads to more consistent, predictable shots and makes end of day cleaning faster.
Backflushing
If the above steps are kept up all day, backflushing will work better and you can skip soaking the portafilter!
1. Begin by thoroughly rinsing each group and scrubbing the shower screen clean.
2. Add about a quarter scoop of detergent to the regular portafilter baskets and run hot water through.
3. Remove the baskets and rinse them and the handles thoroughly, removing all stubborn grime and detergent. The goal is a shiny, new looking portafilter and basket. Again, you can skip the soaking, it's unnecessary!
4. Place blind baskets in portafilters and add a half scoop of detergent to each. Add a little hot water and stir to dissolve. Then place in group.
5. To start the automatic backflush cycle:
Turn power switch off (counter clockwise two stops)
While holding big 2 on the left keypad turn power switch back on (clockwise two clicks)
6. Once the cycle completes remove portafilters and thoroughly scrub shower screen while running plenty of hot water through group.
7. Rinse blind basket too and then insert portafilters back in to group and start the backflush cycle again.
8. That's it! Place regular baskets back in portafilters and engage in group lightly overnight.
To start the automatic backflush cycle:
Turn power switch off (counter clockwise two stops)
While holding big 2 on the left keypad turn power switch back on (clockwise two clicks)
