Baking White Chocolate Blondies...

  • You will need:
  • 150g white chocolate (Milky Bar is best!)
  • 125g butter (unsalted or salted)
  • 1.5 teaspoons vanilla essence
  • 2 eggs
  • 200g plain flower
  • 100g white chocolate chips
  • About 15 pecan nuts - optional
Method: Preheat your oven to 180°C. Melt the chocolate and butter together in a bowl. (You can either do it in a microwave or over a bowl of boiling water). Fold in the rest of the ingredients apart from the chocolate chips and the nuts. When mixing the eggs, ensure you do not scramble them. After your mixture is thick and well stirred, add the chocolate chips and pecan nuts (optional).

Once your mixture is smooth, pour it out into a greased tin (it is suggested to line it with baking parchment/paper). Bake for around 20 minutes, depending on how fast your oven cooks. It is perfectly cooked when the brownies are golden brown on top. Leave to cool for a few minutes and then slice and enjoy with a cuppa' tea!
