Golden Heirloom Tomato Soup

I found these beautiful heirloom tomatoes at my local .99cent Only store. Packaged 4 tomatoes in a one pound package. If you haven't shopped at the .99cent Only Store, you're really missing out as you'll find lots of hidden gems there that you never expect.

Ingredients

  • 1 pound Golden Heirloom Tomatoes (I used a combination of large heirloom and grape/cherry tomatoes)
  • 1 medium yellow onion
  • 1 box Trader Joe's Ginger Miso Broth
  • Salt ( I used smoked salt, choose your favorite smoke flavor)
  • 4 tsp butter-approximately 1/2 stick (you may substitute EVOO if you like)
  • 2 Cloves of Fresh Garlic, finely minced
We are going to peel the tomatoes by putting them in boiling salted water for just one minute or until you see the skin pucker and separate a bit, then shocking them in an ice bath. The skin will be easy to peel away once the tomatoes are cooled in the ice bath. If the seeds are large you may discard the seeds as well, if the seeds are small or if their are not to many seeds, you can just add them into the soup. Roughly chop the peeled tomatoes into small pieces.

Add the butter or EVOO to a 3 quart sauce pan, add the diced onions and cook over low heat. Season the onion with salt and white pepper. Do not caramelize or brown the onions, cook them until they are translucent.

Cook the onions until they are translucent do no brown them!

Add the peeled tomatoes that you have roughly chopped along with the diced garlic. Season the tomatoes with salt and white pepper. Cook until the tomatoes are tender and they have released most of their liquid. Add the broth until it covers the tomatoes. When the tomatoes are fully cooked and they break up easily (you'll be able to tell they will be very mushy and easy to crush) Use your immersion blender to puree the soup until it is smooth. At this point you can also add some half and half or Mexican crema or table cream.

Ready for blending at this point

Garnish with chopped chives and/or parsley and serve with your favorite grilled cheese sandwich or your favorite goldfish cheese crackers that smile back at you.
