Quick and Easy Enchiladas Spice up dinner at home Kylie Cohen '20

Many people are struggling with the transition that COVID-19 has brought upon everyone. From having to social distance, to not having school, one of the hardest changes is not being able to eat out at restaurants. This has forced families to eat in the comfort of their own homes for most meals. For the families that aren't good at cooking or for those who are, here is a quick and easy enchilada recipe to spice up dinner.

Ingredients:

  • Preheat oven to 375°
  • 2.5 lbs of ground beef
  • 2 packet of taco seasoning
  • 1 1/3 cup of water
  • 2 cans of enchilada sauce
  • 2 packets of tortillas
  • 2 packs of mexican cheese blend
  • Pyrex dish
The first step is to cook the ground beef until it is all browned. Once it is fully cooked, you will need to strain in to separate the beef from oil.
After straining the beef, you will then take your 2 packets of taco seasoning and mix it into the beef. After seasoning settles in, pour the water into the skillet with beef.
Let the beef sit in skillet for a minute. In the mean time, spread about a spoonful of the enchilada sauce on the bottom of the pyrex dish.
Take each tortilla one by one and fill it with half beef, half cheese.
Roll it into a burrito shape and place on dish. Repeat for all until dish is full.
Pour remaining beef, cheese, and sauce all over the top.
After dish is filled, pour enchilada sauce over the top and top it all with shredded cheese.
Place dishes in the 375° oven for 25 minutes.
Take out of oven, let cool and enjoy!
