Theirs - prosciutto-wrapped chicken over risotto.
Take Aways: Prosciutto makes everything better.
Risotto and Arborio rice. It's Arborio before it's cooked, Risotto afterwords. Transformation. What's that about?
Recipe changes: Butter, it called for to add butter to the arborio on the verge of becoming risotto. I nixed that. With olive oil, prosciutto drippings and parmesan already added... I'd say that's enough fat causing ingredients for one recipe. Taste great any way.
Stock concentrate: recipe called for it, i skipped over it. oops. (take photo)
Recipe called for remaining proscutto to be added to the risotto... what remaining Prosciutto?
