Christmas foods Culinary specialities of the trentino

Good morning, we are Nicola Nardon and Enrico Tabarelli, two students of ITT Buonarroti in Trento. We attend the first class. We live in Val di Cembra, near Trento.

Christmas is coming, a big holiday that is celebrated with family or with friends. We also celebrate Christmas and everyone is preparing it his way. Adults decorate roads, children write letters and the old prepare the Christmas lunch, that is very good. In Trentino there are many typical foods, which vary from area to area and they are fantastic! At Christmas we eat: canederli, polenta with stew and sauerkraut, apple strudel and zelten. Adults drink mulled wine, boys and children drink apple juices.

FIRST COURSE: CANEDERLI

Canederli are dumplings made with: grated bread, eggs, milk, butter, flour, speck or cheese and prasley. They are almost always served with beef broth.

SECOND COURSE: POLENTA WITH STEW AND SAUERKRAUT

Polenta is a yellow typical food and is made of flour for polenta. With polenta you eat stew, pieces of meat, and sauerkraut, that are vegetables.

THIRD COURSE: APPLE STRUDEL

Apple strudel is a sweet made of flour, butter, sugar, milk, apple, pine nuts, raisin.

FOURTH COURSE: ZELTEN

Zelten is a typical Christmas sweet of Trentino. To do it, you must have this ingredients: (for a few people)

300 grams of fluor;

150 grams of sugar;

125 grams of butter;

3 eggs;

A sachet and half of yeast;

Package of figs;

150 grams of walnuts;

60 grams of pine nuts;

100 grams of raisin;

1 glass of marsala;

1 hectogram of almonds.

Method:

Cut the dried fruit and put in the marsala. Beat the sugar with the butter and add the eggs and the salt. Then add the flour with the yeast. If the dough is hard, add two glasses of milk. Take off the dried fruit and mix in the dough. Decorate with the almonds. Cook for 45/50 minutes at about 180/200 degrees.

DRINKS: MULLED WINE & APPLE JUICE

Mulled wine, is the drink for adults. It is hot wine with particular spices. Apple juice is the children's drinks, with local apple.

We hope to pass a Christmas full of fun and fantastic foods. We wish you a MERRY CHRISTMAS.
