Blueberry muffins are great for a light snack By: Prasaus Yeager '22

If you are looking for something that is light and sweet to eat, then these are the perfect treat for you.

First, preheat oven to 375 degrees

Set aside cupcake trays and put whisk together 2 cups of flour, 3/4 cup of sugar, 2 teaspoons of baking powder, and 1/4 teaspoon of salt

Then, whisk together the wet ingredients:

  • 1 cup of milk
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 melted butter

Pour the wet ingredients into the dry ingredients and mix until just combined.

Fold in about 2 cups of blueberries. They can be frozen or fresh.

Pour the batter into the cupcake tins and put them in the oven for about 20 minutes.

Once they are done they should look something like this:
