Durham Chef, DPS Cafeteria Manager debut next Durham Bowls Creation
DURHAM - Durham Public Schools is proud to announce the second of six new recipes from Durham Bowls 2018…the Cuban Pork & Rice Bowl.
On Thursday, January 24, the Cuban Pork & Rice Bowl will debut in school lunch lines across the district. This Cuban and Spanish-inspired dish features local pasture-raised pork (provided by Firsthand Foods), brown rice, veggies (carrots, spinach, tomatoes, sweet red & yellow peppers), dates, figs and spices. The Cuban Pork & Rice Bowl is the creation of Chef Roberto Copa (Copa Restaurant owner) and Gwen Coley (Food Service Manager at George Watts Elementary School).
Last month, the Sweet Potato, Kale, and Mozzarella Flatbread created by Chef Ricky Moore (Saltbox Restaurants) and Glenda Collins (Food Service Manager Club Boulevard Elementary) debuted. The flatbread dish featured locally grown sweet potatoes and kale provided by Farmer Foodshare.
About the 2018 Durham Bowls Competition
On October 13th, 10 DPS Food Service Managers and 10 Durham Chefs produced mouth-watering samples of their recipe-in-a-bowl concepts designed earlier in the year to meet student tastes, school kitchen constraints, and all federal meal regulations. Over 400 students, families and community members turned out to eat great food, vote for their favorites, watch a documentary about Durham Bowls, face paint, dance, and more.
One parent who attended the event wrote, “My kids and I were blown away by the ingenuity, creativity and deliciousness displayed at this event. Durham Bowls made me so proud of DPS and of our community.”
