Chef Tasting Menu: The Nikkei Experience

At its simplest, Nikkei cuisine is the cooking of the Japanese diaspora. Japanese immigrants have found themselves in a variety of cultures and contexts, but have always maintained a loyalty to their native cuisine. Since the 19th century, two countries have substantially shaped Nikkei cooking more than the rest of the world - Brazil and Peru.

Chef Tasting Menu: The Chifa Experience

Chifa is a culinary tradition based on Chinese Cantonese elements fused with traditional Latin ingredients. Though originating in Peru, the Chifa tradition has since been adopted by neighboring countries, like Ecuador and Bolivia. Chinese immigrants came to Latin America mainly from the southern province of Guangdong in the late 19th and early 20th centuries.
