Haiti is a Caribbean country that shares it's area with the Dominican Republic on the island of Hispaniola. It lies between the Caribbean Sea and the North Atlantic Ocean.

Climate and Terrain- Haiti's climate is tropical ; semi arid. It is mostly rough and mountainous. The mountains cut off in the trade winds. 66.4% agricultural land, and 3.6% forest.

The island lies in the middle of a hurricane belt, therefore the island experiences occasional flooding, earthquakes, and periodic droughts. Haiti today is still recovering from the hurricane in 2010 that devastated the land.

Extra Information: Population- 10 million. Ethic Groups: Black- 95% Language: French and Creole. Religion: Roman Catholic

Culinary origins: It originates from a bland of several culinary styles spawned from French, African, Tairno Natives, and Spanish. The French controlled the island before it was known as Haiti. The French controlled the slaves that worked there, but were later completely outnumbered. The Haitian Revolution in 1803 was the most successful slavery rebellion in the Western Hemisphere, and the French were completely massacred in the process.

Foods and spices: Two words; Unpretentious and simple- they are known to be bold and spicy that demonstrate a primary influence of African style with French influence. In dishes peppers and herbs are seasoned deliberately. The most popular style of cooking is the barbecue, or cooking meat over a wooden fire the smoke gives the meat a certain taste and give an incredible aroma to the food.

Tropical foods and spices: Okra, ackee, taro, pigeon peas, cassava, and avocado. Also many known fruits such bananas, pineapple, and mangos, are common there.

Popular foods/recipes: Riz colle aux pois- rice with kidney beans glazed with marinade sauce. Topped with red pepper, tomatoes, and onions. Sometimes accompanied by bouillon- a stew consisting of vegetables.

Rice and Beans eaten beside or topped with bean purée or sauce poured on white rice. There is no name specified. Also a dessert, is pen pat at pudding. The recipe is stated below for more information.

Legume Haitian- a thick veggie stew of eggplant, cabbage, shay one, spinach, watercress, and other veggies. Flavored with epice, onions, garlic and tomato paste with beef or goat. It is sometimes served with rice.

Etiquette and Restaurant experiences: You may only begin eating once the host says "Bon Appetite." Also keep your hands visible throughout the meal when you aren't using your utensils. Keep in mind in informal restaurants, you may need to share a table with other people. Finally Waitstaff are summoned by making eye contact, waving or calling out is considered rude.

Holidays and celebrations: I had trouble findings many public holidays, but here are the few I found.

Independence Day- Jan 1, When Jean Jacques Dessalies declares independence in Haiti.

Ancestry Day- Jan 2, Remembering the lost lives lost in the fight for freedom

Finally: Not many Public holidays exist in Haiti. There are some voodoo celebrations but hey are not considered public. During these rituals there is dancing, praying and human possession. One popular celebration is their festival of the dead, where protests call apron the spirits, or loa that for guidance and prophecies.
