Butternut Squash Laksa Vegetarian edition

Laksa is a hot and sour, spicy, sweet, coconut, based noodle soup that is a Southeast Asian favorite. It usually is made with seafood or chicken. In this version we are not using curry or seafood. Traditionally Laksa is a noodle soup with rice noodles or sometimes a ramen type noodle. We are using spaghetti squash as a noodle substitute. Traditional Laksa also uses tamarind paste, dried shrimp paste, and various chilis for that Southeast Asian umami flavor, we will use miso, fish sauce, mango ginger chutney, guavas, and yuzu hot sauce to replicate the original flavor profile.

Cut the squashes in half, remove the seeds and spray with olive oil and bake for 40 minutes at 375 degrees. After the spaghetti squash cools, use a fork to separate the spaghetti squash flesh into noodles. Peel and cube the butternut squash.

Mise en Place

Ingredients: 1 butternut squash, 1 Spaghetti squash, 2 Pears, 2 Ribs of Celery, 1 Medium Yellow or Sweet Onion, 3-4 Cloves of Garlic, 3 tablespoons fresh minced ginger, 2 teaspoons fish sauce, 1 tablespoon Miso Paste, 2 Pineapple guavas peeled and diced, 2 tablespoons Mango Ginger Chutney, 2 teaspoons minced lemon grass, 1 dash Yuzu Hot sauce, 1 teaspoon Tumeric, 1 can coconut milk, 2 cups Broth (Vegetable, Seafood, Chicken), 1 tablespoon Sambal Olek or Chili Garlic paste, 1 green bell pepper, Siracha Baked Tofu-sliced thin, 1 cup mushrooms-quartered.

Dice the onion and garlic. Sautee until translucent, then add the fresh ginger and cook for an additional minute until ginger is fragrant

Peel and dice the roasted butternut squash and Pears and add to onions

Peel and dice the Guavas and add to the pot
Add the seasonings

Add the seasonings

Yuzu hot sauce, Fish Sauce, Mango Ginger Chutney, Miso, Tumeric, Sambal or Garlic Chili Sauce, Minced Lemon Grass, Zest of one Lime

Add the 2 cups of stock

Cover and simmer until pears and celery are tender.

Blend with immersion blender until the soup is smooth

Reduce the heat and add spaghetti squash, bell peppers, mushrooms, and Siracha Tofu

Cook on simmer until Tofu is heated through and bell pepper is tender

Serve with lime wedges and Enjoy!
