The fall season is the perfect time to enjoy one pot cooking. Most families are busy so this simple recipe is all in one pot and cooks for hours This beef stew can be done using either the stove or a slow cooker. Just put the beef potatoes let together and let it cook for three or more hours. There's no better way to serve your family and friends except with a delicious hearty stock Beef Stew. By combining very basic and simple fall stew seasonings, some vegetables and beef you can create a delicious meal especially nice for the comfort of chilly fall nights. A favorite addition of mine is to marinate the meat before you add it to the pot for some extra flavor. You can also replace the half a stick of butter with “I can’t Believe it’s not butter”.

On a wooden cutting board, dice up two sweet Vidalia onions, five stalks of green celery and five carrots or one bag of mini carrots. Add three medium sized potatoes and dice them up to about the same size.

Minced Meat

Chop the meat into medium size cubes with a chefs' knife.

Heat a large pot slightly and add a stick of butter. Slowly add in the Beef Cubes. Start browning at medium temperature and turn as needed.

Continue to add all the beef and brown all sides...turning to create the browning.

Next, add the vegetables previously chopped up. Include carrots, celery, onions and potatoes in a large pot.

Use a full 32 oz. box of chicken stock broth to the pot. Organic broths work best and have less salt.

Stir all the ingredients using a wooden spoon.

Place fresh herbs (if possible) on top of the stew ingredients. Use Thyme and a single Bay leaf. Herbs can be removed at the end of cooking time and discarded. Add a generous pinch of salt and fresh ground pepper. Cover with lid and put on simmer for three hours. Beef should be fully cooked and falling apart so that it is easy to cut, even with a spoon.

The final product will be a delicately cooked blend of all the vegetables and meat you added to produce a tasteful and nutritious meal.
