Part 2 — Dinner Prep: Chicken piccata for a very special guest STORY AND PHOTOGRAPHY BY ROBERT NEFF

August 17, 2017. My CondoSeniors take Dinner Prep very seriously. There would be no chicken piccata without lemon.

I start by photographing the most important ingredient.
Let the slicing and dicing begin!
One slice for each piece of chicken. That is a minimum recommendation. .
Shalots make a big difference.
Sure that is enough?
Tomatoes are simmering with garlic and olive oil. The sauce pan is melting the butter in the olive oil.
Shalot time!
Lemons, capers and salad on stand by.
Lemon quarters are squeezed and placed in the sauce base.
And I just asked for more garlic. They said that was enough.
Steaming the green beans.
Add capers, chicken and lemon slices.
That oven is over 60 years old.
Buttered garlic toast hot out of the toaster oven.
Flowers are a must. Shop every Sunday for flowers. They like to watch me sneeze!
The lighting of the candles compares to the Olympic opening ceremonies!
Now my CondoSeniors set the mood and ambience. My job is to open the Prosecco, pour and wash the glasses when finished..
Appetizers are peppers stuffed with blue cheese and cream cheese.
Yes, they go down easy like poppers.
Prosecco didn't last long. Somehow, one of my CondoSeniors is the "odd senior out." One Diva is on a red kick.
