Corry's Key Lime Pie


  • 1 Wax paper wrapped package graham crackers (1/3 of a pound box) less 2 squares
  • 1/2 Stick melted butter (or half coconut oil/half butter)
  • 1/4 C Sugar
  • 1/4 tsp Salt
  • 3 Egg yolks
  • 14 oz. Can of sweetened condensed milk
  • Zest and juice of 1 regular lime
  • ½ cup Nellie & Joe's Key West Lime Juice

Crust Directions

Preheat the oven to 350°

Blitz graham crackers, sugar and salt in a food processor until it turns into crumbs

Add the melted butter and pulse until combined

Press the mixture into the bottom and sides of the pie pan

Bake crust for 6 minutes

Filling Directions

Beat the egg yolks at high speed until light in color and fluffy

Add the condensed milk and lime zest and beat until thick

This is key; while beating the egg mixture, slowly add the lime juice, mixing just until combined.

Pour the mixture into the crust; it's ok if the crust is still warm

Bake for 10 minutes Cool on a wire rack, then refrigerate
