Noble Crust is founded by a team of local restaurant veterans. Tim Curci, founder of Bonefish Grill and Hops Grill and Bar. Tj Thielbar, founding member of Bonefish Grill and a former National Culinary Supervisor for Hops Grill and Bar. Jeff Strouse, who has a background in law and accounting and is a consultant for a financial services firm.
