What is a Stock?What are its applications? Stock is a flavored liquid preparation that is usually used in sauces or soups.The liquid most often used in making stock is water.Which comes in different varies such as white stock, brown stock fumet,court bouillon glace,bouillon,jus,vegetables Stock.Also creates new favoring to cooking.

White Stock: This is a clear, pale liquid made by simmering poultry,beef, or fish bones.A white stock has a lightly golden color that is clear and mild in flavor.

Brown Stock : This is an amber liquid made by simmering poultry, beef, veal or game bones that have been browned first. Roasting the bones makes the stock, get a deep, rich, dark brown color and flavor

Fumet: Very similar to fish stock, this is a highly flavored stock made with fish bones.

Court Bouillon: This is an aromatic vegetable broth used for poaching fish or vegetables. A court bouillon is made usually with water and wine or vinegar.

Glace: Sometimes referred to as glaze this is a reduced stock with a jelly - like consistency, made from brown stock, chicken stock, or fish stock.

Remouillage: This is a week stock made from bones that have already been used in another preparation, sometimes used to replace water as liquid used in a stock; Remouillage is the french word for rewetting.

Bouillon: This is the liquid that result from simmering meats or vegetables; also referred to as broth.

Jus: This is a rich, lightly reduced stock used as a sauce for roasted meat. They usally are started by deglazing the roasting pan, then reducing to achieve the rich flavour desired.

Vegetables Stock: This is usually made from mirepoix, leeks, and turnips. Tomatoes, garlic, and seasoning may also be added to flavor or darker the stock, but tomatoes must be strained with a cheesecloth or filter so that no seeds or skins get into the stock.
