Chicken and Cauliflower Bowl Make for as little as $12

Makes 3 Servings

Ingredients:

2 chicken breast ( cooked)

Trader Joe's cauliflower rice or homemade

1c shredded carrots

1/2c onion

1c vegetable broth

1/2 tea thyme( add more if you like)

1/2 tea rosemary ( add more if you like)

Squeeze of lemon

Salt and pepper to taste

Cocunut oil or extra virgin olive oil

Start to finish 40min

Super Simple! Cauliflower is great for an anti-inflammatory diet or anyone looking to boost brain and heart health.

Boil your chicken and set aside. You can prep ahead of time to have one less step later.

Use a large saucepan ( I use a wok)

Sauté your onions and carrots , in coconut oil. Once they are softened, add your cauliflower rice and the rest of ingredients, but wait on the chicken. Since the chicken is already cooked you don't want to over cook and make it dry. If you preped ahead of time, I wait until about 15 min before it's done to throw in. That way your really just heating up. Also if you need more oil, toss it in.

Cook for about 25min or until all vegetables are tender. Add your chicken and mix together. Just like that you have a super simple dinner with tons of nutrients.

I don't give a lot of specific directions to my recipe because using Whole Foods can be so creative. Being able to tailor a recipe to your liking will make you more successful because you like eating it! So, get in the kitchen and start experimenting.
