On Thursday this week we got in some beautiful fresh Wahoo. Chef Austin Klein seared it rare (the only way to eat fresh Wahoo). The preparation was perfect. Chef Austin made up a delicious fresh pineapple and pomegranate salsa that was served atop seared Wahoo with julienne vegetables and drizzled with a Mango Soy Reduction!
