Join Celebrity Chef Massimo Capra as his guests on a Culinary Discovery of Thailand and Vietnam. Massimo will match his skills in a fun showdown with Celebrity Chef Naroor from the world Famous Blue Elephant in Phuket as they both cook together.

Born in Italy, Chef Massimo Capra culinary training began in Salsomaggiore, Parma. He then started his culinary journey at the famous Trattoria dall' Amelia in Mestre near Venice. He spent several years at Hotel Royal in Courmayeur, Val d'Aosta, Hotel Savoy and Drei Tannen restaurant in San Martino di Castrozza, and under contract with Gallia Hotels in Milan and Various resort properties. Chef Massimo Capra came to Toronto in 1982 and worked at "Archers", a restaurant owned by a family member. In 1989, he became an acclaimed chef at "Prego della Piazza", where he remained for nine years. In 1997, Chef Massimo Capra joined forces with Paolo Paolini, formerly of Splendido Restaurant to open Mistura Restaurant. Sopra Upper Lounge, opened in 2006, and now is a favourite venue for a variety of entertainment needs. In 2010 chef Massimo Capra licenced his name to the famous restaurant "Rainbow Room" in the Crown Plaza Hotel in Niagara Falls and the last few years he became chef brand-owner of Boccone Trattoria Veloce and Boccone Pronto at Pearson airport in Toronto and Soprafino Restaurant at Hamad International Airport in Doha Qatar. Chef Massimo Capra is currently building his next venture in his hometown of Mississauga; Capra's Kitchen will be a casual Italian eatery with heavy emphasis on Pasta, Pizza and Antipasto. Capra’s Kitchen will open in the summer of 2016. Author of "One Pot Italian" and "Three Chefs the kitchen men" which in 2011 received the gold award from Canadian Culinary Book Award, Chef Capra is the food editor for "Canadian Home Trends" magazine. Chef Massimo Capra is no stranger to television being the host of his own show Gourmet Escapes and is a regular guest expert on the long running City TV Cityline, chef host on the hit series Restaurant Makeover on the Food Network and now Massimo is a judge on the hit show Chopped Canada.

Day 1 saigon – Arrival

Meet on arrival at Tan Son Nhat international airport/ Ho Chi Minh by TBA, pick up and transfer to the hotel. -

Entry VISA ASSISTANCE you will not have to worry about custom and immigration process as our staff will take care of this and ensure a smooth immigration process. (The representative will meet guests before immigration counter to assist.

Day of leisure or optional excursion :09:00 Proceed to the central boat pier to take a half day excursion to Cu Chi tunnels, not by road but along the waterways. This exclusive travel on private speedboat (app.1hour/way) offers you great excitement as you cruise passing mangroves, observing a different lifestyle along the river banks towards Cu Chi. Chirps from the aqua birds playing on the surface of the water will add to the sensation of relaxation and freedom. Upon arrival, you will watch a short introductory video showing how the tunnels were constructed. Creep down into the tunnel, explore the amazing underground system and get the full picture of the intelligence, courage and resilience of Vietnamese people.

Foodie tour 18:00-22:00 Part night excursion, part street food adventure. VVA pick up guests at hotel and first stop is to Café zoom to "watch the world goes by" (quoted by The Lonely Planet) and enjoy cocktail and appetizer (inclusive) before adventuring into favorite local eating spot. Guests experience the nightlife of Saigon the way locals do, all from the back of a vintage Vespa scooter. The tour will start with a ride to part Chinatown and then heading to District 4 through busy streets and alleys to see the night life of locals and enjoy street sea- food and cold drinks, places that foreigner won't be found. Leaving district 4 to district 3 the tour pass through downtown district 1 to take in the sights on the way to Banh Xeo, specialty of Saigon, and southern food with the locals. Then the tour will continue to a hidden Vietnamese-style coffee shop to have a taste of Vietnamese music (live) as a local. After this the tour will bring guest to a lively music venue to enjoy the drinks with live music. Guests ride pillion behind our drivers.

09:00 Cho Lon's sights sounds & scents are vibrating to explore again and again. Let us walk you through colorful merchant streets and markets in Cho Lon “Chinatown” to learn how Minh Huong (Chinese origin) community has been integrating into Vietnamese life. Visit the “East-West Fusion” Francis Xavier Church, built for Chinese Christians which witnessed the last prayer of President Ngo Dinh Diem and his brother in the fatal morning. Mingle beneath the large coils of suspended incense in Chinese Assembly hall, temple of Lady Thien Hau “Goddess of the Sea”. The decorative ceramic figurine, the altars and worshiping objects will reveal untold stories, such as the arrival of Marco Polo or legends of Yue Lao” God of Marriage”,etc. Selective Chinese delicacies would complete your tasty immersion (light meal).

Transfer to Tan Son Nhat Airport for flight to Da Nang City.

Upon arrival Da Nang Airport, meet your guide and transfer to hotel in Hoi An for check-in. Rest of day, free time at your leisure.


Day 4 hoi an – private cooking class & walking tour [b/l/-]

08:30 We visit Hoi An's colorful and bustling central market by boat in small groups with an English speaking tour guide where participants learn about; the uses of different fresh noodles, how to recognize and buy fresh fish, fresh and dried spices, fresh herbs and their uses in our recipes and medicinal purposes, rice and different grains. You will also see and taste many exotic fruits.

We then return to Vy’s Market Restaurant by boat where you will be guided around the many live food counters in this unique first-of-its-kind interactive dining venue in Vietnam. Here you can see, smell, hear, taste, touch and interact with many different food making processes. You can try samples from over 10 different food counters including banh mi, dumplings, pickles, weird & wonderful foods, our rationing foods in Vietnam that were in place for 45 years, sweet treats and many more. You can see rice paper being made from ground rice and water, laid out to dry on bamboo and then later roasted for rice crackers to eat with Hoi An chilli sauce and salads, various shapes and sizes of rice noodles. Experience our famous local noodle dish Cao Lau, see the noodles rolled out by hand and cut in the traditional way with a long knife and then steamed over an open fire. You may participate in many of the street food counters; cutting noodles, making rice paper and wontons, using the bun noodle machine and more. Pitch your skills against chef Massimo

The cooking lesson runs about 2.5 hours – our cooking teachers first demonstrate each dish before you prepare the same dishes yourselves. After the lesson we all sit down and eat what we have cooked. You will receive a copy of the recipes and a Vietnamese cooking utensil to take home.

14:00 Take a walking tour to discover this historic town which used to be a prosperous seaport city during the 16th to 18th centuries. Visit Tan Ky old house, Fukien Assembly Hall, and the 400-year-old Japanese covered bridge. Travelers can also see local residents raise silkworms and produce silk for Hoi An's burgeoning textile industry.

Transfer back to your hotel for leisure time.


Day 5 hoi an – Da nang – Hanoi –

Pick up and transfer to Da Nang for flight to Ha Noi/ Noi Bai Airport. Estimated flight: VN 168 [10:30-11:50].

Upon arrival Noi Bai Airport, meet your guide and transfer to hotel for check-in. Relax and enjoy hotel facilities.

16:00–19:00 Have a street food tour with a food blogger, the 3-hour tour includes market visit and tasting of many different things from best in the area.

Return to your hotel for leisure time.


DAY 6 Hanoi –

Leave behind the hustle & bustle of the city to the outskirt where we discover a small village on the left bank of the Red river – Bac Bien Village.After 15 minutes. Arrive in local guide (Dan)’s house. Welcomed tea and snacks. Tour guides give a briefing session and self-introduction and about his village, tour, bikes.

Then, Start pedaling through small alleys of Bac Bien village to the Duong river’s bank. Take a local boat ferry to cross the river to its left bank. We see the big difference after 30 minutes from the down town.

Ride a bike along the quiet dike, from villages to villages, where we can see many water buffalos, traditional typical houses; pagodas, temples, local market and be caught in the beautiful rice paddy fields, gardens of vegetables and corns.

Welcomed by local people to their old house with tea, snacks. Hear from them about their lives, traditional custom, changes from old days to present. Learn how the bonsai trees have being planted and formed and their stories, meanings …

Say goodbye to the hospitable host and continue cycling on the quiet roads with rice fields… up to the beautiful dike, then head back to Dan’s village by the boat again or cross a new bridge.

Stop by a local temple, which is located by the Red river. If we are lucky we may have a chance to see a unique ceremony of the Vietnamese people – “Len Dong” or “Going into a trance”. This ceremony is very interesting, and unique then we meet and have a drink with a family in the village to know more about their life, and the changes of the village & surrounding area.

At around 12.30, transfer back to the center. On the way, stop by a hidden restaurant for lunch.

Return to the downtown, drive to visit the Temple of Literature – built in the 11th century under Ly dynasty for the 1st university of Vietnam. Continued to visit Hoan Kiem Lake and Ngoc Son Pagoda.


Day 7 Ha Noi – Ha Long Bay [b/l/d]

Drive to Ha Long (130km, approx. 2.5 hours) by new highway Hanoi – Halong - Hanoi for an overnight cruise.

Upon arrival in Halong Bay, board your boat for an unforgettable cruise. Welcome seafood lunch on board.

Cruise in Halong bay visiting some islands and caves. Go kayaking (optional) around some nice beaches if weather permits.

Late afternoon, admire the sunset over the bay, enjoy happy hour on the bar deck or attend a cooking demonstration.

Day 8 Ha Long [b/l/d]

Start the day with a Taichi class on the sundeck

A full day at leisure to explore further the mystic bays. Enjoy kayaking, swimming, or just relaxing on board.

Day 9 Ha Long – Ha Noi –

Start the day with a Tai Chi class on the sundeck.

Continue cruising the bay, visiting some other highlights.

Have a late breakfast before disembarkation.

Return to Halong wharf, disembark and transfer to Noi Bai International Airport for flight to next destination (Take Approx. 3 hours driving).
