Three Ways to Turn Bananas into Breakfast By Chava Makman-Levinson

Limited ingredients in your home during quarantine? Here are three recipes all using the same versatile fruit as their base. If you have bananas available at home, these recipes provide not only a (somewhat) healthy meal, but they are a blast to make and can add some fun to a dreary day.

Recipe 1: Banana Oat Power Balls

Preheat the oven to 350 degrees.

Mix together:

2 ripe bananas

2 cups oatmeal (any oats or crushed oats work!)

2 eggs

3 tbsp hemp seeds (optional)

Peanut butter, vanilla extract, and cinnamon (how ever much you want)

2 tbsp chocolate chips

Cook for 15 minutes, and enjoy! Makes approximately 15 cookies.

Recipe 2: Banana Peanut Butter Toast

Toast a piece of bread.

Spread on almond or peanut butter.

Slice a banana, and place pieces on top.

Sprinkle cinnamon on top if you desire!

Recipe 3: Gluten Free Banana Bread

1 and ½ cups of oats blended

1 teaspoon baking soda

½ teaspoon salt

3 bananas

2 eggs

1 teaspoon vanilla extract

½ cup sugar

½ cup vegetable oil

Lots of chocolate chips

Butter sheet, and bake at 300 degrees for 20 min. Make sure to use a sheet cake pan.
