The backstory

After graduating from cooking school in 1985, I started working at the prestigious Celtic Manor Hotel near Newport, Wales, host of the 2010 Ryder Cup.

From there I traveled to London working for many big name restaurants and hotels, alongside the likes of celebrity chef Marco Pierre White and cookbook author Prue Leith.

After an overdose of the big smoke, I decided to discover the wilds of the world, with stints in Barbados, Montreal and Vancouver, which then finally led to new opportunities in the Canadian Rockies.
