Our last Valley Table story starred Christy Casper and Chef Mark discussing his featured dish. The new Dinner Menu, which debuts on Thursday, March 16th stars Member Chris Strother who sat down with our Food and Beverage Manager TJ Satriano to discuss the perfect cocktail, wine and beer to pair with Chef's new featured dish - Char Siu Chicken.

We also learned a pro tip from Chris about cooking eggplant in a microwave! Enjoy the story and video below.

Classic Mai Tai

Malibu Rum, Meyers Rum, Cayrum, Pineapple, Cranberry, Orange and a splash of soda.

The Wine ...

2014 Riveria Pinot Noir

Garnet, medium bodied, classic Sonoma County Pinot Noir with aromatics of fresh light red fruits (cherries and strawberries) leaping out of the glass, backed up with baking spices and hints of fresh-picked mushrooms and black tea. Flavors of sweet raspberries and cherries combine with anise, sweet oak and white pepper. A pleasant wine to drink from start to finish – great mouth feel balanced with acidity and soft tannins which provide for a long, silky finish.
