Let's Get down to buffet business!

IN THE IMAGES BELOW WE'VE PUT TOGETHER AN INDOOR BUFFET. DUE TO ROOM CONSTRAINTS WE PLACED THE TABLE AGAINST A WALL. WE USED A VINTAGE MODEL SAILBOAT PLACED ON TOP OF SOME CLASSIC COOKBOOKS AND added FLAMELESS PILLAR CANDLES AS A CENTERPIECE.

ALONG WITH THE HOT ITEMS IN THE BUFFET CHAFER (RECIPES FOLLOW), WE'VE INCLUDED A NUMBER OF COMPLEMENTARY COLD ITEMS INCLUDING PASTA, GRAIN, AND LEAF SALADS.

TWO BUFFET CHAFER RECIPES

These take a fair amount of culinary skill (but who doesn't love a challenge?)

First up: chicken Sausage pastry pillows

Makes 48 Pieces

Chicken Sausage Pastry Pillows

Makes 48 Pieces
Preheat Oven to 400 Degrees (Fahrenheit)

Ingredients:

1 package frozen Puff pastry (17.3 oz), thawed

1 package fully cooked chicken sausage (12 oz), Sliced 1/4" thick

1 large egg, beaten

2 Tablespoons All-Purpose Flour (for dusting)

Lightly flour work surface

Place 1 Pastry Sheet On The Floured Work Surface

Roll Into An 8" X 12" Rectangle

CuT Pastry Into 24 Squares (2" X 2")

Repeat with 2nd pastry sheet

Place pastry squares on a foil lined, lightly oiled baking sheet.

Place 1 sausage slice in the middle of each pastry square. Gently press sausage into dough.

Lightly brush each square with egg

Place in oven, bake for 20 minutes, or until puffed and golden.

These pillows should be made as close to your guests arrival as possible.

Serves 8 to 12

Spicy Cajun Blackened Chicken Bites

Serves 8 to 12
Preheat Oven to 400 Degrees (Fahrenheit)

Ingredients:

4 large Boneless chicken breasts

3 tablespoons Olive oil

1 two ounce Jar Cajun spice Blend

Cut chicken into bite sized Pieces. Place in mixing bowl.

Add 2 tablespoons olive oil.

Add Cajun spice blend and gently...

...stir until well coated

Heat a cast iron skillet on medium high heat

Add 1 tablespoon olive oil.

When oil is hot, add several chicken pieces to the skillet.

Work in batches. Do not overcrowd the pan.

Sear for 2 minutes on each side and then place on a foil lined, Lightly oiled baking sheet.

Place in preheated oven and cook for 8 minutes, or until cooked through

THIS RECIPE CAN BE MADE A DAY AHEAD. SIMPLY LET COOL, THEN COVER AND PLACE IN REFRIGERATOR. GENTLY REWARM IN 200 DEGREE OVEN PRIOR TO PLACING IN BUFFET CHAFER.

WE SUGGEST SETTING UP YOUR BUFFET CHAFER (SEE VIDEO AT BEGINNING OF THIS PRESENTATION) ABOUT 45 MINUTES BEFORE GUESTS ARRIVE.

HAVE REMAINING ITEMS PLATED/PLATTERED AND READY TO GO. ARRANGE THESE ON THE BUFFET TABLE ABOUT 15 MINUTES BEFORE YOU OPEN THE DOOR.
