In the images below WE've put together an ouTDoor buffet. We've structured it so that guests Can serve themsElves from either side. Along with the hot items in the buffet chafer (recipes follow), we've incLuded a number of compLemEnTary cold items including pasta, grain, and leaf salads.
Here's a closeup look at our spread. We've incorporated many of the Ideas in the buffeT mastery infographic Earlier in the presentation. we also set up the the drinks table in a separAte area to cut down on congestion.

Two bUffet chafer recipes

These take a bit of skill (but not mUch)

First up: SWEET & TANGY MINI MEATBALLS

Serves 8 to 10

SWEET & TANGY MINI MEATBALLS

Serves 8 to 10
This recipe calls for just 3 ingredients and a slow cooker.

2.5 Pounds froZen mini meatballs (from your supermarket's frOZen foods section)

2.5 cups vinegar-based bbq sauce (0r your favorite Bbq sauce)

2 cups grape jelly (raspbeRry jam works well, too)

Combine the jelly and bbq sauce in youR slow cooker. Stir until smooth.

Add frozen mIni meatballs to jelly/bbq Mixture. Stir to combine.

Cover and cook on high setting for 2.5 to 3 hours.

You can keep these mini meatballs in the Slow cooker until you're ready to Place in your buffet chafer.

Serves 8 to 10

TATER TOTS WEARING ROBES O' BACON

Serves 8 to 10
This is another less-thAn-5 Ingredients recipe

32 frozen tater Tots

8 slices of bacon, quartered

Half cup turbinado sugar (brown suGar works, toO)

PARSLEY (THIS IS OPTIONAL, BUT IF YOU WANT TO CHOP IT UP AND SPRINKLE ON TOP JUST BEFORE SERVING IT'S KINDA NICE)

Preheat oven to 400 degrees (fahrenheit).

Line a baking sheet with Parchment paper. Lightly Spray with non-stick cooking spray.

On a work surFace place tater tots and bacon in a row.

Take a frozen tater tot and wrAp it up in a piece of bacon.

Next, lightly roll the bacon wrapped tater tot in the suGaR.

Place sugared bacon wrapped tater tots on the lined baKing sheet.

Place in preheated oven for 25 to 30 miNUtes, or until golden brown and crispy.

It's not a bad idea to Turn these guys over halfway through the cooking Time.

This recipe can be Made a daY ahead. Simply let cool, then cover and place in refrigerator. Gently rewarm in 200 degree oven prioR to placing in Buffet chafer.

We suggest setting up your Buffet chafer (see video at beginning of this presentation) about 45 minutes before guestS arrive.

Have remaining items plated/plattered and ready to go. Arrange these on the buffet table about 15 mINutes Before you open the door.
