Vitamins
Water Soluble: Can be dissolved in water, vitamins C and B
Vitamin B (Folic acid): Helps the body make new cells. Comes from dark green leafy vegetables. Vitamin B deficiency can cause Spina Bifida. Vitamin B toxicity can mask a vitamin B12 deficiency.
Vitamin C: Protects against infection. Comes from citrus fruits, strawberries, broccoli, and tomatoes. Vitamin C deficiency can cause scurvy. Vitamin C toxicity can cause kidney stones, and can interfere with Vitamin E.
Fat Soluble: Can be dissolved in fat, Vitamins K, A, D, and E.
Vitamin K: Helps blood to clot normally. Comes from dark green leafy vegetables. Vitamin K deficiency can cause bleeding and bruising. Vitamin K toxicity can cause Jaundice.
Vitamin A: Promotes good vision, hair, and skin. Comes from red, orange, and dark green vegetables. Vitamin A deficiency can cause night blindness. Vitamin A toxicity can cause a loss on appetite, blurred vision, and joint pain.
Vitamin D: Builds and maintains bones and teeth. Comes from milk/dairy products and sunshine. Vitamin D deficiency can cause Rickets. Vitamin D toxicity can cause nausea, vomiting, and kidney damage.
Vitamin E: Protects the membranes of white and red blood cells. Comes from vegetable oils, fruits, and vegetables. Vitamin E deficiency can cause poor nerve connections and neurological problems. Vitamin E toxicity can cause headaches, brain hemorrhages, and muscle weakness.
Minerals
Calcium: Strengthens bones and teeth. Comes from milk/dairy products, whole grains, and dark green leafy vegetables. Calcium deficiency can cause Osteoporosis. Calcium toxicity can cause kidney stones.
Iron: Helps make red blood cells, helps muscles store and use oxygen. Comes from animal products, meat, and dark green leafy vegetables. Iron deficiency can cause Anemia. Iron toxicity can cause heart disease and elevated LDL's.
Sodium and Potassium: Maintains fluid balance. Comes from salt, fruits, and vegetables. Sodium or Potassium deficiency can cause muscle cramps, irregular heart beats, and seizures. Sodium or Potassium toxicity can cause high blood pressure.
