ingredients & Procedure

  • Preheat oven to 400F
  • 24 large dates, pitted
  • 12 slices hickory smoked bacon, cut in half
  • 24 herb sprigs for garnish (we used marjoram sprigs)
  • 24 interesting skewers

Don't blink...this part will be over before you know it.

on a clean cutting board, place a half slice of bacon. At the end closest to you, place 1 date.

Roll up the date in the bacon.

Secure with a skewer.

repeat 23 more times. space evenly on a parchment-lined baking Sheet.

place in your 400F Preheated oven. roast for 25 minutes. Turn the dates halfway through to ensure bacon is evenly cooked.

...and place in fuel holders. Place water pan in wire rack.
Fill a pitcher with 2 quarts of very hot (not boiling) water.
Pour water into water pan.

The fuel cans get very hot. Do not handle the cans or move the chafing dish once lit.

It's time...

Once you've removed the dates from the oven, arrange in one of the aluminum half-pans. Carefully place in the chafing dish. The edges of the pan might get a little bent while you do this. Simply smooth them with a towel once the pan is in place.

Now would be good time to add those herb sprigs to the top of each date..
