Pastry Chef Shuna Lydon has been baking professionally for over twenty years. She has worked in some of the world's most celebrated restaurants and bakeries, including The French Laundry, Gramercy Tavern, Aziza, Citizen Cake, The Modern Pantry, nahm, BOYY & SON CAFé, Peels, and Calliope. In 2011 Ms. Lydon was a semi-finalist for the James Beard Foundation Award of Best Pastry Chef. In 2016, Shuna Lydon was the Chef - In - Residence at Robert Rauschenberg's artist residency in Captiva, Florida.

Shuna's began writing professionally in 2008, starting with her blog eggbeater which gained international acclaim and countless accolades. She also wrote for KQED and Edible San Francisco. In The Egg Beat, at Medium.com, Ms. Lydon wrote features on many highly creative pastry chefs in NYC and Northern California.

Seabird Bakery was hatched in October 2020. We make classic classics, modern flavours & have a fierce loyalty to seasonal produce in jam, marmalade, cakes and pastries.
