Foam cakes are cakes with very little (if any) fatty material such as butter, oil or shortening.
The foam cake has 11-12 egg whites only.
The foam cake uses air that is beaten into the eggs as a leavening agent. This is mechanical.
Angel food cake is an example of a foam cake.
For the foam cake mixing method, first you will mix dry ingredients together.
Then you mix egg whites together with sugar until it turns foamy. Next, pour eggs into bowl.
Sift the dry ingredients over the eggs.Fold if necessary. Then bake and cool inverted.
