Spicy queso

Let's not kid ourselves. You should maybe only have this recipe a couple of times a year. Pretty much what we're dealing with here is a the most delicious grilled cheese sandwich imaginable, except without the bread and with a bit more kick.
This may be the simplest of all 4 recipes in our 'Big Game Buffet Series'. Once you have all your ingredients ready to go, just put them all in a slow cooker on low for about an hour. Stir about 30 minutes in and you'll be in melty cheese heaven.

Does our Spicy Queso need to be served hot? Umm...YES!

We'll get into a really wonderful way to do that in just a few minutes...

Spicy Queso

Prep time: 20 minutes/Cook time: 1 hour

ingredients & Procedure

  • 12 oz. spicy pork sausage (loose, not in casings)
  • 1 pound pasteurized recipe cheese product (we like the brand that rhymes with 'Melveeta'), cubed
  • 1/2 cup shredded quesadilla cheese (or shredded cheddar cheese)
  • 1 (14.5oz can) diced tomatoes (hold a tablespoon back for garnish)
  • 1/3 cup chopped pickled jalapeño peppers (same as the tomatoes, hold a little in reserve for garnish)
  • 1 tablespoon chopped pickled habanero peppers (optional)
  • 3/4 cup hoppy beer (we like an IPA)
  • tortilla chips and baby bell peppers for dipping

let's make us some spicy queso....


As mentioned earlier, this is super simple. You're going to take all the items you see below and put them into a slow cooker; set in on low; stir after 30 minutes; and be ready to serve after just an hour.
Into your slow cooker, add the following (in this order):
1 lbs. pasteurized recipe cheese product (we like the brand that rhymes with 'Melveeta')
12 oz. spicy pork sausage (fully cooked)
1 (14.5oz can) diced tomatoes (hold a tablespoon back for garnish)
1/2 cup shredded quesadilla cheese (or shredded cheddar cheese)
habaneros and jalapeños
3/4 cup hoppy beer (we like an IPA)
cover and set to low
stir after 30 minutes
this is the perfection that will be achieved in about an hour

While this is in the slow cooker, let's chat about the best way to serve this to your guests...

30 minutes before your guests arrive Set up your chafing dish...

This recipe should be served hot. But how? Rest easy, friends. The Sterno Buffet Kit, is the answer:

Here comes the Party Set tutorial...
Place the wire rack where it will be used (away from flammable objects-napkins, drapes, centerpieces, etc.).
This wire rack can be reused multiple times.
This fuel is certified 'green' by the Green Restaurant Association,
Carefully open the chafing fuel cans...
Use a spoon to open.
...and place in fuel holders. Place water pan in wire rack.
Fill a pitcher with 2 quarts of very hot (not boiling) water.
Pour water into water pan.
Light the fuel.
The fuel cans get very hot. Do not handle the cans or move the chafing dish once lit.

If your chafing dish will be out of eyesight while your in the kitchen, make sure an adult is in the room to prevent an accidental fire.

Let's get back to the kitchen....

You're all set to go. Your chafing dish is set up and the Spicy Queso is right where it should be--hot and velvety. All that's left to do is ladle the queso into one of the aluminum half pans shown above.

Your guests just called. They're 13 minutes away! Let's get this on the table....

It's time...

Once you've filled the aluminum half pan, carefully place in the water pan of the chafing dish. The edges of the pan might get a little bent while you do this. Just smooth them with a towel once the pan is in place..
